Bold whole-leaf Assam tea and a cup of deep red Assam tea

Assam and Himalayan black tea

Fully oxidised whole leaf for a deeper, stronger cup. Assam is bold and malty; Himalayan is smoother and rounder.

Brew at 95°C to just off the boil for 3 to 4 minutes. Assam takes milk well; Himalayan is best on its own.

  • Himalayan Black Tea

High-grown black tea, smooth and rounded, with a warm finish.

    Copper cup

    ₹270 about ₹5.4 a cup

    100 g, about 50 cups

  • Assam Black Tea

Whole-leaf Assam: bold, malty and brisk, with a deep red cup.

    Deep red cup

    ₹235 about ₹4.7 a cup

    100 g, about 50 cups

  • Milk or no milk?

Assam takes milk. Himalayan shines without.

Assam's malty strength stands up to a splash of milk, like a strong breakfast tea. Himalayan black is smoother and more aromatic, so drink it on its own.

Prices are for a 100g pack unless another size is shown. Per cup is the cost of the tea only, at 2g of leaf (about a heaped teaspoon) for a 150 to 200ml cup, so a 100g pack makes about 50 cups. Green and white teas give a second steep from the same leaf, so their real cost per cup is about half that.

Leaf tea, explained

Leaf tea, also called whole-leaf or orthodox tea, is rolled rather than cut, so the leaf stays whole or in large pieces. It opens slowly in hot water and gives a clearer, lighter cup with far more aroma than CTC, which is why it's usually drunk without milk.

Green, white and black tea all come from the same plant, Camellia sinensis. What changes is how much the leaf is allowed to oxidise after picking: very little for white, stopped early with heat for green, and fully for black, which turns the leaf dark and the cup red-gold.

What a flush is

In Darjeeling, a flush is a picking season. The first flush is picked in spring, around March and April, and brews light, bright and floral. The second flush follows in early summer, around May and June, when the leaf gives an amber cup with more body and ripe fruit.

CTC tea granules beside whole-leaf black tea
Left: CTC, cut into small granules that brew fast and dark for milk chai. Right: whole leaf, rolled not cut, for a clear cup without milk.

Four steps to a clear cup

  1. Heat the water. About 80°C for green and white: let boiled water stand for two or three minutes. 85 to 95°C for Darjeeling, and 95°C to just off the boil for Assam and Himalayan black.
  2. Measure the leaf. 2g, about a heaped teaspoon, for a 150 to 200ml cup.
  3. Steep, covered. 2 to 3 minutes for green, 3 to 4 for Darjeeling and black, 4 to 5 for white.
  4. Strain and taste. Taste before adding anything. Assam takes milk; the rest are best as they are. Keep green and white leaf for a second steep.

What is leaf tea, and how is it different from CTC?

Leaf tea, also called whole-leaf or orthodox tea, is rolled rather than cut, so the leaf stays whole or in large pieces. It infuses slowly and gives a clear, aromatic cup that is best without milk. CTC tea is crushed into small granules that brew fast, dark and strong, which is why CTC is used for Indian milk chai.

What is the difference between Darjeeling first flush and second flush?

First flush is picked in spring, around March and April, and brews pale gold, light and floral. Second flush is picked in early summer, around May and June, and brews amber, with more body and the ripe, fruity notes Darjeeling is known for. If you are new to Darjeeling, start with the second flush.

Which leaf tea should I start with?

For a classic Darjeeling cup, Darjeeling Second Flush. For something light and fragrant, Darjeeling First Flush. For an everyday green tea, Dooars Green Tea. For a strong black tea that also takes milk, Assam Black Tea. Not sure? Take a tasting flight and brew three side by side.

How do I brew leaf tea properly?

Use 2g of leaf, about a heaped teaspoon, for a 150 to 200ml cup. Brew green and white tea at about 80°C, which is boiled water left to stand for two or three minutes: 2 to 3 minutes for green, 4 to 5 for white. Brew Darjeeling at 85 to 95°C for 3 to 4 minutes (first flush a little cooler and shorter), and Assam and Himalayan black at 95°C to just off the boil for 3 to 4 minutes. Water that is too hot, or leaf left in too long, is what makes green tea bitter.

How many cups does a 100g pack make, and what does a cup cost?

About 50 cups, at 2g of leaf a cup. Across this range, the tea in a cup costs between about ₹4.4 and ₹15.8. Green and white teas can be steeped two or three times, so the real cost of a cup is lower still.

Can I add milk to leaf tea?

Assam Black Tea takes milk well, like a strong breakfast tea. Darjeeling, green and white teas are best without milk, so their aroma comes through. A slice of lemon or a little honey goes well with Darjeeling and green tea if you like it.

Can I reuse the leaves?

Yes. Green and white teas give two or three good steeps from the same leaf; add a minute each time. Darjeeling gives a lighter second cup. Assam gives most of its strength in the first steep.

Does green tea have caffeine?

Yes. All true tea, whether green, white or black, contains caffeine. A cup of green or white tea usually has less than a cup of black tea, but it depends on how much leaf you use and how long you steep it.

How should I store leaf tea?

Keep it in an airtight container away from light, heat, moisture and strong smells such as spices, because leaf tea soaks up aromas easily. Green tea and first flush Darjeeling are at their brightest in the first few months after opening.
