The 4-minute method
How to make Paan Chai
On the stove, for one 150ml cup. Strong, coppery, and the same every time.
- Boil 75ml of water, at a rolling boil.
- Simmer 2.5g of tea, about a level teaspoon, for two minutes, until the granules open.
- Add milk, 75ml, and simmer two minutes more.
- Finish with sugar in the last minute, then strain and pour.
Tip for Paan ChaiGo a little lighter on the sugar. The fennel and rose bring their own sweetness.

How do I make Paan Chai?
For one 150ml cup, boil 75ml of water, simmer 2.5g of tea (about a level teaspoon) in it for two minutes, add 75ml of milk and simmer two minutes more, then add sugar in the last minute and strain. Go a little lighter on the sugar. The fennel and rose bring their own sweetness.
